The United States offers thousands of great mountain hikes. After hiking hundreds of great mountains across the country, I have put together an opinionated list of many of the classic summit hikes in the U.S for my fellow peakbaggers. As I continue to research and hike more mountains I will try to tweak and improve this list.
This list is sorted alphabetically by state (and not by rank or rating).

For most of the above summits, the peak (pun intended) climbing season is from July through September. However, many can be climbed year-round and are often less crowded during the non-summer months.
The U.S. offers many world-class mountaineering experiences. Take note that I have purposely excluded the following mountains/summits from the above "classic summits" list because reaching these peaks requires mountaineering, intense rock-scrambling (e.g. class IV), and/or rock-climbing.
If you are looking for some classic rock scrambles across the United States, you can't go wrong with any of these peaks/routes:

✮ Colorado: Capitol Peak via the Northeast Ridge / Knife Edge (class IV)
✮ Colorado: Crestone Needle via the South Face (class III)
✮ Colorado: Crestone Peak via the South Face (class III)
✮ Colorado: Longs Peak via the Keyhole Route (class III)
✮ Colorado: Mount Bierstadt to Mount Evans via the Sawtooth Ridge (class III)
✮ Colorado: Mount Meeker via the Loft Route (class III)
✮ Colorado: Mount Sneffels via the Southwest Ridge (class III)
✮ Colorado: Pacific Peak via the West Ridge (class III)
✮ Colorado: Torreys and Grays Peak via Kelso Ridge (class III)
✮ Colorado: Wetternhorn Peak via the Southeast Ridge (class III)
✮ Idaho: Mount Borah via Chicken-Out Ridge (class IV)
✮ Maine: Katahdin via the Cathedral Trail and Knife Edge (class III)

Half Dome in California, Precipice Trail in Maine, and Angels Landing in Utah all offer some class III terrain with cable and/or ladder assistance.
California and Colorado also have a ton of awesome off-trail rock scrambles. You'll need to do some research to discover them. Other states have a few great off-trail rock scrambles, too.

Easiest 14ers:

✮ Mount Bierstadt (class II)
✮ Mount Elbert (class I)
✮ Mount Sherman (class I)
✮ Quandary Peak (class I)
✮ San Luis Peak (class I)
Take note that no Colorado 14ers are "easy". Easy is only a relative term as compared to the harder 14ers to hike. Handies is generally considered the easiest Colorado 14er. Mount Bierstadt is probably the most popular of the "easy" Colorado 14ers.
